Spinach With Pine Nuts & GarlicSpinach With Pine Nuts & Garlic

I love cauliflower soup but I usually add some potatoes and carrots. While I was doing Phase 1 of the Atkins diet, I tried this recipe out and loved it. It would also be good with a little bit of broccoli but I didn’t have any on hand.

Ingredients

  • 1 kg (2.2 pounds) fresh spinach (or 500g (17.64 ounces) frozen leaf spinach)
  • 3 tbsp (40 ml) olive oil
  • 3 tbsp (40 grams) pinenuts
  • 2 garlic cloves (finely chopped or crushed)

Directions

Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.In medium sauce pan heat olive oil on low heat. Add onion and celery and cook on medium heat until onion is translucent. Add 4 cups chicken broth and cauliflower and bring to boil. Cover and simmer for 20-30 min until cauliflower is soft. Use
